Food is any substance that is consumed by an organism for nutritional support. Food usually consists of plant, animal, or fungal origin and contains essential nutrients such as carbohydrates, fats, proteins, vitamins, or minerals. The substance is ingested by an organism and assimilated by the organism's cells to provide energy, maintain life, encourage physical requirements, and support growth. Different species of animals have different feeding behaviours that satisfy the needs of their metabolisms and have evolved to fill specific ecological niches within specific geographical contexts.

Omnivorous humans are highly adaptable and have adapted to obtaining food in many different ecosystems. Humans generally use cooking to prepare food for consumption. The majority of the food energy required is supplied by the industrial food industry, which produces food through intensive agriculture and distributes it through complex food processing and food distribution systems. This system of conventional agriculture relies heavily on fossil fuels, which means food and agricultural systems are one of the major contributors to climate change, accounting for as much as 37% of total greenhouse gas emissions. Cooking, also known as cookery, is the art, science and craft of using heat to make food more palatable, digestible, nutritious, or safe. Cooking techniques and ingredients vary widely, from grilling food over an open fire, to using electric stoves, to baking in various types of ovens, to boiling and blanching in water, reflecting local conditions, techniques and traditions. Cooking is an aspect of all human societies and a cultural universal.

Preparing food with heat or fire is an activity unique to humans. Archaeological evidence of cooking fires dates to at least 300,000 years ago, but some estimate that humans started cooking as early as 2 million years ago.

The expansion of agriculture, commerce, trade, and transportation between civilizations in different regions offered cooks many new ingredients. New inventions and technologies, such as the invention of pottery for holding and boiling of water, expanded cooking techniques. Some modern cooks apply advanced scientific techniques to food preparation to further enhance the flavor of the dish served. (Full article...)

Deep frying (sometimes referred to as deep fat frying) is a cooking method in which food is submerged in hot fat, traditionally lard but today most commonly oil, as opposed to the shallow frying used in conventional frying done in a frying pan. Normally, a deep fryer or chip pan is used for this; industrially, a pressure fryer or vacuum fryer may be used. Deep frying may also be performed using oil that is heated in a pot. Deep frying is classified as a hot-fat cooking method. Typically, deep frying foods cook quickly since oil has a high rate of heat conduction and all sides of the food are cooked simultaneously.

The term "deep frying" and many modern deep-fried foods were not invented until the 19th century, but the practice has been around for millennia. Early records and cookbooks suggest that the practice began in certain European countries before other countries adopted the practice. (Full article...)

Chinese food staples like rice, soy sauce, noodles, tea, chili oil, and tofu, and utensils such as chopsticks and the wok, can now be found worldwide.

The world's earliest eating establishments recognizable as restaurants in the modern sense first emerged in the Song dynasty China during the 11th and 12th centuries. Street food became an integral aspect of Chinese food culture in the 7th century during the Tang dynasty, and the street food culture of much of Southeast Asia was established by workers imported from China during the late 19th century. Garlic (Allium sativum) is a species of bulbous flowering plants in the genus Allium. Its close relatives include the onion, shallot, leek, chives, Welsh onion, and Chinese onion. Garlic is native to Central Asia, northeastern Iran and the foothills of Himalayas. It has naturalized in many other parts of the world, including Mediterranean Europe and China. There are two subspecies and hundreds of varieties of garlic.

Garlic has been used for thousands of years as a seasoning, culinary ingredient, and traditional medical remedy. It was known in many ancient civilizations, including the Babylonians, Egyptians, Jews, Romans, and Chinese, and remains significant in many cuisines and folk treatments, especially across the Mediterranean and Asia. Alexis Benoît Soyer (4 February 1810 – 5 August 1858) was a French chef, writer and inventor, who made his reputation in Victorian England.

Born in north-east France, Soyer trained as a chef in Paris, and quickly built a career that was brought to a halt by the July Revolution of 1830. Moving to England he worked in the kitchens of royalty, the aristocracy and the landed gentry until 1837. He was then appointed head chef of the Reform Club in London, where he designed the kitchens on radical modern lines and became celebrated for the range and excellence of his cooking. His best-known dish, lamb cutlets Reform, has remained on the club's menu since the 1840s and has been taken up by later chefs from Auguste Escoffier to Prue Leith. (Full article...)
