Hot water to the best of my knowledge, see the new etymology section. Bitter principles as alkaloids? Some bitter compounds may be degraded by extended boilingApothecia (talk) 09:17, 25 February 2009 (UTC)
The ethymology is wrong. Particle 'de' in this case is a short for 'des' to indicate decomposition through 'coccion'.
