Thistle Health Inc., operating as Thistle, is an American, meal kit company headquartered in Vacaville, California.[1][2] The company provides a subscription-based service specializing in plant-based diets.[3][4]
History
[edit]Thistle was founded in 2013 by Ashwin Cheriyan and Shiri Avnery.[5] The company originally operated as a cold-pressed juice pop-upbefore transitioning to a direct-to-consumer, meal-kit subscription model in 2015.[6][7]
Between 2020 and 2022, Thistle expanded operations across the US, with West Coast coverage including major cities from San Diego to Seattle, and the addition of a production facility in Burlington, New Jersey grew East Coast service to include major metropolitan areas including New York, Philadelphia, Boston, Washington D.C., and Atlanta.[4][6][8]
In 2026, expansions were made to include delivery to Denver, Colorado; Salt Lake City, Utah; Minneapolis, Minnesota; Madison, Wisconsin; and Milwaukee, Wisconsin.[9][10]
Services
[edit]Thistle operates a "ready-to-eat" delivery model.[4] The company’s menu consists of whole-food meal offerings, as well as salads, snacks, desserts, and beverages.[3][11][12][13]
All offerings are dairy- and gluten-free.[11][13] Customers may opt to add sustainably-sourced animal proteins such as poultry or pork.[3][14]
Sustainability
[edit]In 2020, Thistle moved its primary production to a facility in Vacaville, California powered by renewable energy.[15] The company utilizes an in-house delivery fleet for "local zones" so that cooler bags and ice packs can be returned and reused.[3][12][16][17]
Thistle offsets the carbon emissions of deliveries through the purchase of carbon credits from organizations such as Cool Effect, and efforts to minimize food waste are facilitated via partnership with the nonprofit Replate.[18][19] The company also partners with rePurpose Global to reduce plastic pollution.[20]
Research
[edit]In 2021, Thistle's meals were utilized in the "Fiber Force" study conducted by researchers at the University of California, Irvine.[21] The peer-reviewed study, published in the journal mSystems, investigated the impact of a high-fiber, whole-food diet on the human gut microbiome.[22]
