Ox or cows?

Well, 'cow' is often used as a general term, including both sexes; maybe 'bovines' would be better. 'Ox' is also sometimes used generically rather than specifically (a castrated male draught animal). OTOH, why is ox-gall restricted to male in the first place? Are male gall-bladders different from female? What is the age of the cattle from which ox gall is obtained - for example, mature adults or veal calves? Is ox gall obtained from cattle that have been slaughtered for food and leather products or are the cattle slaughtered merely to obtain their bile? Is there a way to obtain the bile without slaughtering, for example, using a naso-gastric tube? The article is completely silent on the method/s of gathering the fluid. The treatment of animals in producing our consumables is becoming increasingly important in society, hence the movement in creating vegan-friendly art mediums.
