I haven't gone exceedingly in depth on it, and there are certainly possibilities for less scrupulous authors to include their own theories on what diet may effect what part of the human genome, but the review articles I looked at here agree with the modern epigenetics claims, which is to say it's pretty variable and depends on the author and reliability is dependent on how well the work is cited outside of the field which seems pretty insular. The abstract to Epigenetics and Nutritional Environmental Signals is honestly pretty ridiculous-sounding: "All terrestrial life is influenced by multi-directional flows of information about its environment, enabling malleable phenotypic change through signals, chemical processes, or various forms of energy that facilitate acclimatization."
