Capaill Uisce?

The intro to this article mentions the Capaill Uisce, which links to a section on another page detailing the cabbyl-ushtey, which is a Manx water horse. I can find no reference to this spelling "Capaill Uisce" outside of a fictional book. Why is that spelling used here, rather than cabbyl-ushtey? Is there any attestation to Capaill Uisce being an alternate spelling for cabbyl-ushtey? It reads more Irish than Manx, but I can only find references to the each-uisce in Ireland.
