This article needs a lot of work, someone with direct knowledge of the practice should expand it if possible. A couple of obviously missing points are:
Was this ever a custom at every meal? or only special occasions? If the latter which kinds of occasions and how often etc.
Sources are needed for the history section as it mostly looks like speculation.
Also I have removed some non-encyclopedic parts of the history bit that definitely need reliable sources and preferably to be listed as the opinions of some author or other if they merit inclusion at all.
