The lead says "that is made" from turtle shell, but then just a sentence or two later it states that commercially available guilinggao doesn't have turtle in it. The article mentioned about the conservation status of Cuora trifasciata that was used in the past, and said other types of turtles are being used now, but didn't mention the species.
Since this dessert originated from TCM (traditional Chinese medicine), so the Chinese Pharmacopoeia might provide some insight into the question. The 2025 edition of Chinese Pharmacopoeia specified Mauremys reevesii (Chinese Pond Turtle) as the source species of turtle shell ("Guijia" and "Mauremydis Carapax et Plastrum" in original text). It also stated that both the carapace and plastron are used. The text can be found on page 194 and 195 of the first volume of the 2025 edition of Chinese Pharmacopoeia.
