Crestfish are eaten occasionally by some fishing crews. The meat is light pink in life and fairly dense, like salmon in color and texture. It turns white to very pale pink when cooked. That taste is mild and agreeable. If they were caught in greater numbers, they would be seen in the markets more often. I know this from personal experience as fisheries observer in for many years.
