In speaking of toxicity, might mention that aspartame packet (~ equiv 1 tsp sucrose or one sugar packet in restaurants etc has 15mg of aspartame. (9 mg phenylalanine is much less than human body requirement for this essential amino acid) Bulkier more lipophillic ester (vs methanol) are sweeter as wikipedia shows phenylpropyl attached to aspartate N is 20000x sweeter. Referring article shows dipeptide aspartylglutamate as neurotransmitter and some tripeptides have endorphin and opioid activity, so some concern justified. Pear wine is 1% methanol by GC, or 10% of total alcohol. Alcohol dehydrogenase activity is 7000:1 ethanol: methanol. Like cyanide, small amouts of methanol are harmlessly metabolized.
